You must read this:

there are pretty much two possibilities here. 

One, Gray's faking it. He's not the council informant (seeing as the council informant reported his presence), but is still putting up a front to infiltrate in search of END. 

Two, as implied in the chapter, Gray's being corrupted/influenced by his Devil Slayer magic. Which would not be particularly surprising. Back in chapter 238, Azuma turned into tree after over exerting himself using Great Tree arc lost magic. In chapter 301 we learn extensive use of Dragon Slayer magic turns you into a Dragon. Given the other two slayer magics are lost magics, it's likely Devil Slayer magic is considered a lost magic as well. Given Lost Magics tend to have bad consequences when you screw up with them, including turning you into the thing whose power you were using, it's perfectly logical that screwing up with Devil Slayer magic would turn you into a demon. Especially in this case as Marde Geer said Gray did a partial demonic transformation to fend off Memento Mori, and Gray's current markings look similar. 

In either case he likely didn't tell Juvia, because he didn't want her following him into danger. 

As for the differences between Gray and Natsu, it's pretty straightforward. For starters, "son inherits their father's will" in general is a reoccurring thing in Mashima's work. It's filed under things that crop up in Mashima's work because his father died when he was a kid. Now...

Natsu: Igneel asks him to go get the book of END and keep it safe, then goes off to fight Acnologia and dies. All the last words associated with him are ones of thanks and encouraging Natsu to live his life. At no point did Igneel ask Natsu to kill END, Zeref, or Acnologia. Natsu's desire to defeat Acnologia is his own will. Nor does it have any particular time constraints on it, other than Natsu knows that unless something drastic has changed from Future Rogue's timeline, Acnologia is due to show up within the next 7 years, 1 year at a minimum. Oh, and Igneel died fighting, and managed to make Acnologia pay with his arm. 

Gray: Silver pretty much asks Gray to finish what he started, and destroy END, hence Gray getting Silver's DeS powers. So "Destroy END" is not only his father's unfinished will, but also his father's last request. Time constraints are unknown, the book is in Zeref's hands and he could potentially break the seal at any time. Further, even if his DeS powers aren't affecting his mind at the moment, they pretty clearly are turning Gray into a demon. If Gray thinks that the completion of the process means he turns into something that mindless rampages like Deliora, that imposes a time limit of "before I turn into a demon", regardless of whether or not he's correct. Also, Silver basically needed to be mercy killed without ever getting the chance to directly fight those who had prevented him from resting in peace. 

So Natsu doesn't have any particular pressure on him to go after Acnologia. He knows Acnologia will likely be coming to him soon enough, and the more time it takes, the better to bridge the gap in strength. Gray on the other hand does have some pressure on him to go after END. The more time it takes, the worse it can get. 

In short, Gray's got a number of things going on that could have made him go off the deep end or at least appear to have gone off the deep end, whereas Natsu does not.
